For the Black Coffee Layer:
4 Packets of Knox Gelatin
3 Cups Hot Coffee – We used this instant coffee because we had some left over from another recipe. It worked great!
I Cup of Cold Water
2 Tablespoons Sugar – You an adjust this to your liking
For the Milk Layer
2 Packets of Knox Gelatin
1/2 Cup Cold Water
1 and 1/2 Cup Hot Coffee
14 oz. Can Sweetened Condensed Milk
I don’t even know why I wanted to make this recipe. I think it’s because I found these cute molds and was going to sell them on my Etsy Store, but I just couldn’t bare to do it and needed an excuse to own a vintage Jello mold. The coffee jelly is an excellent summer treat because it’s cool and there’s no oven required.
I started by making the coffee layer. First, pour your ice cold water into a bowl and “bloom” the gelatin by sprinkling the packets over the top. You want to try and keep it as even as possible so the gelatin is soaked evenly. Wait 3-5 minutes, then pour in your hot coffee and sugar. Whisk for about 5 minutes to make sure the gelatin is completely dissolved. That’s it! Set this mixture aside while you make the milk layer.
For the milk layer, repeat the blooming process by sprinkling your gelatin over a half cup of ice cold water. Once this mixture is combined, stir in 1 and 1/2 cups hot coffee and stir for about 5 minutes. Add your can of sweetened condensed milk during the last minute of stirring.
Assemble! If you want to use a mold, spray it first with a little bit of non-stick spray. We used coconut oil spray but you can use whatever you have on hand. If you’re using a ramekin like these or a glass you won’t have do spray it. Next, just layer your gelatin layers any way you like, letting them cool (and set) in the fridge for at least 20 minutes between layers. Again, if you’re using a mold, the best way to get the gelatin out smoothly is to dip the bottom in warm water for a second. Just quickly. If you warm it up too much it will melt your gelatin and make a huge mess.
There you have it! So easy and so good. Serve topped with whipped cream or ice cream. Or just plain.
